Today there are at least 500 types of pasta in the market. A lot of people love this staple Italian food because it can be used in different types of dishes besides Italian cuisine.
Pasta is made from wheat flour (sometimes flour from grains or cereals), unleavened dough, and water or eggs. Then these are formed into different shapes.
Pasta by Ingredients
All pasta are made from two basic ingredients, durum wheat and water. But variations in preparation and other ingredients create variety.
1. Pasta Secca means dried pasta. It is made by the use of cutting tools and die-plates. Then it is slow-dried for fifty hours or more. Commercial pasta nowadays is dried in molds at high temperatures so that it dries faster. It became popular because it can be stored for longer periods of time especially during expeditions.
2. Pasta Fresca means fresh pasta. It is made by mixing semolina flour with water or all-purpose flour and eggs at higher humidity. This flour comes from durum wheat native to Central Europe and the Near East. It is known as the hardest type of wheat. Pasta fresca should be consumed right away.
Pasta by Shape
The shape of the pasta determines the type of sauce you’re going to use for cooking. They can be classified into seven broad categories.
1. Barbina is the thinnest type of pasta. The name means “little beards.”
2. Fusilli is from an old word meaning rifle, because it’s shaped like a screw.
3. Vermicelli are slightly thinner than spaghetti. It means “little worms.”
4. Ziti are shaped like a hose and are long and narrow. The wider version is called Zitoni.
1. Anelli means “rings.” The smaller version is called Anellini.
2. Ditali means “thimbles.” They look like tubes.
3. Fregula is made in Sardinia in Italy. They look like beads.
4. Orzo is a rice-shaped pasta sometimes called Risoni. Orzo means “barley.”
1. Campanelle means “little bells.” They look like flat bells.
2. Cencioni are shaped like the petals of a flower. The name means “little rags.”
3. Fiori, meaning “little flowers” is named as such because of its shape.
4. Orecchiette means “little ears” and look like bowls or the ears of a human.
1. Bavette means “little thread.”
2. Fettuccine are shaped like little ribbons.
3. Linguine means “little tongues” because it’s a flat spaghetti.
4. Pizzoccheri is a type of pasta made from buckwheat.
Short-Cut Extruded Pasta
1. Faglioni means “little beans” and look like narrow, short tubes.
2. Manicotti look like large tubes with ridges.
3. Penne are shaped like tubes with diagonal ridges and pen-shaped tips.
4. Rigatoni look like curved tubes.
1. Maltagliati are triangular-shaped.
2. Passatelli is made from eggs, bread crumbs, Parmesan cheese or nutmeg and lemon.
3. Spatzle are soft noodles made from eggs.
Pasta With Filling
1. Agnolotti means “lamb’s ears” and are semi-circular.
2. Fagottini look like little purses.
3. Ravioi is square-shaped with sides of equal lengths.
4. Tortelloni is ring-shaped. The larger version is the Tortelloni.
